Snickerdoodle Cheesecake Bars (Makes 12 per Batch):


The leaves are turning bright colors and falling into piles on the grounds, there’s a crisp feeling in the air, and pumpkins and spiced apples are taking over and back in season (honestly are they ever out of season?). However the best result of autumn is all the awesome recipes! I found a recipe that not only consists of snickerdoodles, but also cheesecake! Since this recipe falls into our autumn category (and has snickerdoodles), attached below is the recipe to this autumn dessert.


Ingredients (Cheesecake Part):


  • Two softened blocks of cream cheese
  • A half cup of sugar
  • Two large eggs
  • A half teaspoon of pure vanilla extract
  • A pinch of kosher salt


Ingredients (Snickerdoodle Part):


  • Two and one fourth cup of all-purpose flour
  • A half teaspoon of baking soda
  • One and a half teaspoon of cinnamon
  • One teaspoon of kosher salt
  • One and a half sticks of unsalted melted butter
  • One cup of sugar
  • A half cup of brown sugar
  • Two large eggs
  • One teaspoon of vanilla extract
  • Dusting of cinnamon sugar



    • Preheat oven to 350 degrees
    • Grease a 9×13” baking pan
    • Make the cheesecake layer:
      • Beat cream cheese and sugar until fluffy
      • Mix in the eggs, vanilla, and salt
    • Make the snickerdoodle layer in separate bowl:
      • Whisk the flour, baking soda, cinnamon, and salt


  • Separate bowl beat butter and sugars until pale and fluffy for about three minutes


    • Add the eggs and vanilla to the butter and sugars and combine together
    • Gradually add flour mixture and mix until all combined
  • Make the whole part:
    • Press two-thirds of snickerdoodle dough evenly in the pan
    • Sprinkle the dough with cinnamon sugar
    • Pour cheesecake batter and smooth evenly over the snickerdoodle dough
    • Take the remaining snickerdoodle dough and break it over the cheesecake layer
    • Sprinkle more cinnamon sugar on top
  • Baking:
    • Bake until edges and the middle of the cheesecake mixture is slightly jiggly
    • Which should be about 37-40 minutes
    • Let cool before cutting in squares
  • Enjoy!
